My favorite explanation of how parallel hybrids work came from Jeremy Clarkson: they're like a toilet. Where a toilet releases water from the stored tank to create more water pressure than comes from the plumbing to force stuff down, a hybrid uses electricity stored in the batteries to create more power than comes from the gas engine.
